Sheet Pan Chicken Fajitas Recipe

INGREDIENTS 

▢1/4 cup vegetable oil ▢3 tbsp lime juice ▢2 tbsp worcestershire sauce ▢1 tbsp chili powder ▢1 tsp cumin ▢4 cloves minced garlic minced ▢1/2 tsp salt ▢1 large white onion sliced ▢3 cups bell peppers sliced (any combination of green, red, yellow or orange will work) ▢1 lb boneless skinless chicken breasts ▢8 tortillas corn or flour ▢Desired toppings: avocados, pico de gallo, limes, cheese, cilantro, sour cream, etc.

STEP-1

In a medium bowl, combine oil, lime juice, Worcestershire sauce, and all seasonings. Whisk to combine. Set aside ¼ cup of marinade.

STEP-2

On a large sheet pan, spread out peppers and onions into a single layer. Pour ¼ cup marinade all over peppers and onions and toss to combine.

STEP-3

Place chicken breasts into the remaining marinade, in the bowl, and allow to marinade for 10 minutes. Place chicken onto sheet pan with peppers and onions.

STEP-4

Set broiler to low and cook for 15 minutes. Flip chicken over and cook for an additional 15 minutes.

STEP-5

When the chicken is cool enough to handle, slice.

Serve chicken, peppers and onions in tortillas with desired toppings.
