INGREDIENTS

▢2 tbsp olive oil ▢4 boneless skinless chicken breasts cubed ▢1 cup carrots sliced ▢2 zucchini sliced ▢14.5 oz diced Italian tomatoes ▢14.5 oz chicken broth ▢grated Parmesan cheese

STEP-1

In a large pot, heat olive oil over medium heat. Add chicken and cook until cooked through.

STEP-2

Add carrots and cook for 5 minutes.

STEP-3

Stir in zucchini, tomatoes and chicken broth. Bring to a boil.

STEP-4

Reduce heat and simmer for 25 – 30 minutes.

Top with Parmesan cheese and serve warm.
