Cauliflower Rice Recipe

INGREDIENTS

▢1 lg cauliflower cut into lg chunks ▢2 TB extra virgin olive oil ▢salt and pepper to taste

STEP-1

Place cauliflower chunks in a food processor and pulse until broken down into rice-size pieces.

STEP-2

Heat olive oil in a skillet over medium heat; add cauliflower ‘rice’, salt, and pepper.

STEP-3

Cover skillet and cook until heated through, 3 to 5 minutes

STEP-4

Remove lid and fluff ‘rice’ with a fork.
