Make the chutney by blending mint leaves, coriander leaves, ground cumin, dried mango powder, garlic, ginger, green chili, red onion, water, lemon juice, and salt until smooth.
Cut the paneer into thin rectangles. Sandwich some chutney between two paneer strips, then repeat with the rest of the strips.
1. Mix cumin, salt, and dried mango powder into the flour. Crush the cornflakes finely. 2. Whisk eggs in a bowl with water.
Dip each paneer sandwich first into the seasoned flour, then into the egg mixture, and finally coat with crushed cornflakes, pressing gently to adhere.
Place the coated paneer bites into the air fryer and spray them with cooking spray.
